If you are interested in coffee and want to learn more about it, listen up and come join us for our next cupping event🙆‍♀️ Every month, we host an evening of tasting different coffees at our roastery on Islands Brygge and everyone is welcome – no matter if you have experience or are simply interested in learning more!

We will introduce you to the exciting world of specialty coffee – from origin, cultivation and varietals to flavour, aroma and more. We will talk about the way we taste, and then of course also try some different coffees with you.

We are super excited to introduce you to our new Brazilian coffee – this one’s a special one: BRA40 Fazenda Aranquã

Demeter-certified organic, biodynamic and selectively hand-picked – what else would you want!! Together with the farmer Luca Allegro, we’ve just started this beautiful partnership and got the first 4 tons (four. tons.) of beans delivered to our roastery.

Luca grows his coffee in the high mountains of Chapada Diamantina on his farm Fazenda Aranquã which is named after a bird worshiped by the indigenous people. Luca’s farming techniques follow certified organic and biodynamic guidelines: The coffee trees are shade-grown in an agroforest system to create an environment of biodiversity and the perfect microclimate for a slow ripening process.

The cherries are processed to pulped natural: After the pulping, a fair amount of mucilage is still attached to the beans when they are taken to the drying patios. The beans are revolved several times a day until 11.5% humidity is achieved. This drying process takes 15 to 17 days, and then the coffee is ready to be shipped!

We find beautiful flavour notes of chocolate, hazelnut and caramel in the cup. Prep yourself for the sweetest cup of coffee and come try it as an espresso or pour over😎✌️

☕️COFFEE FACT OF THE MONTH☕️

Organic, biodynamic, Fairtrade, 4C, Rainforest Alliance – there are a lot of certifications to be found on a coffee bag. But what does it mean – and take – to have a certified coffee?

Certifications have been around for many years and come with a lot of benefits. Producers can showcase their coffee’s quality, sustainable or fair farming practices and, overall, dedication towards the product. A certified coffee can help farmers to differentiate from competitors, enter new markets, and aim for higher prices.

Roasters and coffee shops can demonstrate their commitment to certain farming practices, ethical sourcing and fair pricing. And consumers can ensure to purchase a product that follows their personal ethical and quality standards.

As beneficial as it can be for farmers to get a certification, as tough it can be for smaller producers to stay competitive on the market without a certified product, though: The process certifying a coffee can be long, difficult and costly. Obtaining a certification is not easy or cheap, requires extensive documentation, auditing, and compliance. It can take a long time for farms to become certified (e.g. organic or biodynamic), and the costs for getting and maintaining certifications can strain farmers’ (often very limited) budgets.

In countries with poor water supply or limited access to professional farming equipment, the coffee production often is organic by nature, as the cost of fertilisers or other appliances cannot match the producers’ financial resources. Surely a label on a coffee bag gives credit, but non-certified coffees can be as organic, biodynamic or fairtrade as a certified one – even without a label on the bag.
