Guess what? A fresh batch of cascara arrived at our roastery just a couple of days ago! 🍒

If you’ve tried it before, you’ll know cascara is the dried outer skin of the coffee cherry, which we brew at ROAST as a beautifully tea-like drink (fun fact: it has a similar caffeine level to green tea). You can expect delicate notes of rosehip, red currant, and rooibos tea—perfect drink for cozy days like these. ☁️

This cascara comes from the farm Las Lajas in Costa Rica, run by third-generation producers Oscar Chacón and his wife, Francisca. Set underneath the Poás volcano, Las Lajas has been producing coffee since 1840 and is known for its commitment to organic and sustainable farming. 🌱

Unlike cascara that’s treated as a byproduct, only the ripest and sweetest cherries are selected here. Oscar gives cascara the same care and attention as his renowned coffees, which results in a clean and fruity cup shaped by its unique terroir. 🌋

We couldn’t wait to pack it—so you’ll already find it in all our shops, ready to enjoy on the bar or take home with you.

🇸🇻 New 50-50 coffee on the shelf - welcome El Salvador! 🇸🇻

Producer Carlos Pola has dedicated his life to redefining what specialty coffee can be. Coming from a family of coffee farmers and a background in the textile industry, Carlos applied principles of quality control, efficiency, and data management to coffee production at Finca Las Brisas, which he purchased in 1997 and began running full-time in 2012. 🧑‍🏭

Today, the farm features its own lab for experimenting with processing methods, ensuring quality, and educating workers in specialty coffee. Carlos also developed a traceability system that tracks coffee from harvest all the way to shipping. With a strong focus on sustainability, he has reduced chemical inputs through innovative planting systems, shade management, and beneficial fungi. 🍄 Beyond his own farm, Carlos actively works with other producers, helping them adopt these practices and strengthen their communities through better coffee. 🤗

In this coffee you’ll experience notes of chamomile, plum and caramel. 🍵🍯 And a little sneak peak, it might not be the last time you see Carlos’s name in relation to ROAST, keep an eye 😏

👀 Three new coffees on the shelf? No way! 👀

You may remember Muzo from Rwanda—we had their coffee on our shelves last year, and now we’re excited to bring it back! This small but renowned washing station has an award-winning legacy, including a Cup of Excellence win in 2014. Run with Baho Coffee, Muzo is known for its strong support of smallholder farmers from providing safety equipment and training to helping with the costs of production. In this cup, expect notes of grapefruit, raspberries, and vanilla. 🍊✨

Our new Indonesian coffee comes from Aulia Kahfi, an entrepreneurial farmer who works closely with neighboring producers, collecting and processing small lots of ripe cherries from the Lukup Sabun, Pantan Sile, and Ratawali areas. This special winey anaerobic lot, named Sesongot after a local caterpillar, is fermented for 20–25 days, resulting in a bold wine-like character with sweet notes of prunes and maple syrup. 🍷🍯

Last but not least, our new Kenya— this fully washed coffee comes from smallholder farmers delivering to Kanjathi in Murang’a county. Grown in fertile volcanic soils at high altitude and cool temperatures, the cherries mature slowly, creating Kenya’s signature vibrant and complex cup. In this one you’ll find notes of apricot, black tea and pears. 🍐🍑

🎉 That’s a wrap on 2025! 🎉

This year has been a wild adventure at ROAST! So much has changed, and we’ve reached countless milestones — let’s take a look back:

We kicked off the year at the Nordic Coffee Festival, where our roasters represented us in a roasting competition, and at the Danish Coffee Festival, where our baristas competed in Cup Tasting. 🥄

One of our biggest milestones was opening our fourth — and so far, largest — shop in Sydhavn at the end of April, which also became the new home for our offices and entire roastery.

A long-time dream came true when we opened our Academy in Sydhavn, giving us the space to host all kinds of courses — from cupping and basic barista skills to our recently introduced latte art. 🥛

During the year, we also fully transitioned our roasting from our trusty gas-fueled Giesen to two electric ROEST machines. 🫘

Another major highlight was celebrating our 10 year anniversary in June — a day filled with good vibes, amazing cocktails, and of course, great coffee! 🥂

After a decade, we decided it was time for a fresh look for our coffee bags. We launched sleek new black bags with colorful labels, and we couldn’t be happier with the upgrade. 🧡💚💜💛

We also welcomed a bunch of new subscribers to our coffee subscription, not just from Denmark, but from all around the world (hello to South Korea, Portugal, the USA, Switzerland, and many more 👋).

Back at Vestmannagade, we gave our old roastery a little glow-up, added some tables, and turned it into a cozy spot where you can enjoy your coffee and soak in the Islands Brygge vibes.

And of course, we’ve had LOTS of beautiful coffees this year, and we can’t wait for even more in the year ahead! 🌸
