Most of the specialty-coffee world obsesses over roasting, brewing, processing innovation, and service. But behind every cup is a deeper story—one written in the genetics of the varieties we work with every day. Names like Sarchimor, Castillo, Pink Bourbon, and Gesha appear constantly on offer lists and competition score sheets, yet few professionals fully understand why these varieties taste the way they do, or why farmers continue to plant certain hybrids despite market preferences.

Drawing from his background in specialty coffee, field experience with leading geneticists from illycaffè’s master’s program, and his research thesis on coffee genetics, Tung Nguyen offers a rare bridge between academic knowledge and practical sensory experience. Through a guided lecture, sensory calibration, and an in-depth cupping, participants will explore the future of coffee varieties—and what we might all be drinking in 2050.


Key Questions We’ll Explore

  1. The limited genetic diversity of Coffea arabica. What are the primary approaches to breed new C. arabica varieties?
  2. Why do farmers still plant Sarchimor or Castillo instead of Gesha, even though Gesha commands dramatically higher prices? And why do global breeding programs—such as BREEDCAFS and World Coffee Research—continue promoting Robusta-hybrid varieties?
  3. What coffee varieties will we have by 2050? New technologies in coffee breeding? Beyond Arabica: potential roles of Canephora, Liberica, C. eugenioides, and others?
