Finca Fatima is a family-owned farm in Coatepec in Mexico. Owner Ernesto Perez and his sister, Givette Perez Orea oversee cultivation and processing on the farm.

This lot is comprised of Garnica, Marsellesa and Typica varieties. At 1,250 meters above sea level, Finca Fatima is at risk of Coffee Leaf Rust (CLR) and other diseases and pests. One tactic Ernesto and Givette use is planting CLR-resistant varieties like Garnica and Marsellesa. With careful cultivation and processing, these trees still have immense quality potential. The fastidious processing at Finca Fatima ensures high-quality profiles from these trees.

Harvest & Post-Harvest

Ripe, red cherry is selectively handpicked and processed at Finca Fatima. They float cherry to remove any underripes. Cherry is dried in small Guardiola dryers at low temperatures.

Marsellesa is a hybrid variety in the Sarchimor family. Sarchimor family plants are a hybrid of Villa Sarchi (a natural Bourbon mutation, like Caturra and Pacas) and a coffee leaf rust (CLR) resistant hybrid from Timor-Leste. Marsellesa is a good mix of the flavor profile from Bourbon (via Villa Sarchi, a close genetic relative to Bourbon) and the resilience of the disease-resistant hybrid from Timor-Leste.
